Potato Salad




 I have done potato salad in my Blog before but this is another recipe version that I do . I know there are lots of different versions out there.....but I really enjoy potato salad and do make it different ways. Sometimes warm or cold with different additions.....this is one of those comfort foods that I try and not eat too often. Unless I use all low fat or fat-free ingredients.

It was my birthday and I had some family coming over and they all love 'potato salad' so I decided to make it in my Mom's (RIP) favorite crystal bowl. Since she is no longer with us so  I wanted to implement something of hers.....because she always made potato salad  it in this bowl for company. I remember when she bought this bowl many years ago on a summer family vacation in New Jersey...it must be close to over 40 years.


POTATO SALAD


Ingredients;


8-10 cups peeled, small cubed potatoes
3 -4 eggs, hard boiled
2 Tbsp. red peppers or pimentos, chopped finely
2 scallions, chopped finely
1 carrot, grated finely
1/2 cup sweet pickle relish or chopped finely pickles
1 cup mayonnaise, approximately, to taste
1/2 cup chopped dill



Directions;

Put potatoes in boiling water in large pot covered with water. 
Boil till fork tender but NOT mushy soup like.
Chop the eggs and put into a bowl.
To the bowl add the potatoes (you may mash them but slightly, leaving mostly lumps).
Stir together the potatoes, eggs, red pepper, scallions, grated finely carrots, sweet pickle relish, mayonnaise, chopped dill and season to taste.






 Cooks Tips; This can be made the day before and refrigerated or the day of when you are serving it.
You can adjust the seasonings to taste and sometimes I add a bit of sour cream if I wanted it creamier to the mayonnaise.
