Spaghetti Squash Roasted

This week I decided to do all very low calorie foods and get myself and family into eating more healthy. We normally do eat healthy but sometimes we go off the track once in a blue moon. So instead of pasta we had this for dinner, it was quite tasty. That was my daughter talking who normally would not touch it.

I was at the local Veggie store and they had a pile of these 'spaghetti squash' so I purchased one. It was pretty pricey, I paid $5.89 for it.
SPAGHETTI SQUASH

Preheat oven to 400 degrees.

Cut the squash in half and remove seeds....scooping them out.

Drizzle a small amount of olive oil and brush it on the cut side.
Sprinkle on some salt and pepper and minced garlic if you like....or any kind of seasoning to your taste.

Cut side down, place the squash on a baking sheet.
Roast anywhere from 30 to 45 min.......depending on the size of your squash.

Let sit for 5 min. to cool down.
Scrape the flesh of the squash using a dinner fork.....moving around gently. Fluffing the strands.

You can dress up your squash with spaghetti sauce or just add parmesan cheese to it. You can even drizzle some olive oil on it that has been infused with herbs....and salt and pepper to taste.
Tip......Did you know that the spaghetti squash seeds could be roasted same as pumpkin seeds for an extra treat.

  1. Thank you for your inspiration, I love spahetti squash. I don't like eating roasted seeds, no real reason, but I do dry them and the use them as petals glued to thistle. They make a great flower for a dried arrangement, for outside in a large basket. I often have passersby stop to see what kind of flower that is. When they get shabby from the weather, I spritz them up with paint and extend their decorative appeal yet another season.

  2. I love roasting Spaghetti Squash, last year I grew my own, and this week I just planted 3 plants, so hopefully I will grow more :)
