PANCAKE TUESDAY


Whether religious or not, people around the world are celebrating Mardi Gras, Shrove Tuesday or Pancake Tuesday on February 21 2012 with a giant stack of yummy pancakes.

Shrove Tuesday .....also known as Pancake Tuesday, is the day preceding Ash Wednesday, the first day of Lent. 

PancakeTuesday is linked to Easter...... so its date changes yearly according to the Calendar.

In most traditions the day is known for the eating of pancakes before the start of Lent.

Pancakes are eaten as they are made out of the main foods available, sugar, fat, flour and eggs, whose consumption was traditionally restricted during the ritual fasting associated with Lent.

I love pancakes.....so this was one of my favourite breakfasts when growing up. I would slather that Canadian Maple Syrup all over. Ended up getting sticky fingers.......and then when we went to school we also had pancakes.
...... when I had my own daughter I volunteered at her school for Pancake Tuesday and whipped those panckaes out for the kids in her class........everyone's favourite were when they had blueberries or chocolate chips added to the batter. I sure miss those days.







I got this recipe from a Foodie friend Nenz on one of the Foodie Boards I belong to.

Buttermilk Pancakes

Ingredients:

3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
Directions;

1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter.

Keep the two mixtures separate until you are ready to cook.

2. Heat a lightly oiled griddle or frying pan over medium to med-high heat.


3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir!

Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake.

Brown on....both sides and serve hot.

  1. Interesting that you put sugar in the mixture. We sprinkle it on top of the finished pancakes with a squirt of lemon juice. Ours are also thinner. Had them tonight - takes me back to my childhood.

  4. I love Shrove Tuesday. Such a good excuse to eat savoury then sweet pancakes. That pancake stack looks so inviting.
