TURKISH Potato Salad (Patates Salatası)



When I was visiting Turkey a few months ago a friend from Izmir  in Turkey brought this salad over for a picnic we had in a park beside The Aegean Sea. First I thought it's very hot and I'm not eating a potato salad smothered in mayo in this scorching heat.........but it turned out to be this potato salad, with no mayo. It was so yummy that I had seconds.




POTATO SALAD

6 medium potatoes (I use Yukon Gold)
2 tomatoes, chopped finely
2 green onions, chopped
1 onion (I use Vidalia), chopped
Handful of Italian flat leaf parsley, chopped
Dill, chopped to taste
1/2 cup extra virgin olive oil
1/2 cup fresh lemon juice
salt and pepper to taste


Boil potatoes in skins and when cool peel and cut into cubes.

In a medium bowl...add potatoes, tomatoes, green onions, onion, parsley and dill and combine well. Gently mixing as not to break up the potatoes to make them mushy.

In a small bowl mix together Olive Oil, lemon juice and salt and pepper to taste..... pour over potato mixture and combine.

Refrigerate for a few hours as it tastes better and the flavours marry together.

***This is the recipe she gave me, but I use slightly less Olive Oil and lemon juice .

  5. I understand your feeling, I can't stand being in the basement anymore either. I have days of work left, before I can even begin to replace stuff. It's all over the house, so the house is a mess too. My garden at the back is a mess too, hopefully will get a blast of energy. Thanks for stopping by.
