Sigara Peynir Borek . Turkish Spring Roll

These lil' Cheese Boreks or my friends call them Turkish Spring rolls  are my husband's favorite food from childhood.....they are filled with cheese and herbs.
Boreks are one of the great indulgences of Turkish cuisine – comforting and satisfying. You never can visit anyone's home with the hostess not having any Borek homemade to offer.
Through the years I've noticed on my visits that there have popped a lot of little Borek Shops only making  Boreks, any shape and filling you can think of.....all freshly made daily. There are square shapes, round, triangle and rolled....
These are great as a snack before dinner or they love them there with some Turkish tea a for breakfast.

Crumbled Feta Cheese


2 cups of Feta, crumbled
1/2 cup fresh parsley chopped
1/2 cup fresh dill chopped
Canola Oil for sauteing

Combine cheese, feta and parsley together.

Roll them up in the pastry leaves and fry with the seam down for a few minutes till golden in a skillet with oil......be sure and turn them around to get an even golden color. They fry very quickly so keep watching them. Put on paper towel when golden  to soak up the extra oils.

**** They can also be filled with spinach and cheese or mince meat with onions and tomato.

****Alternatively...you can brush with with some butter or oil and put on a sheet and bake for 15 min. at 375......till golden.

Italian Flat Leave Parsley.


Feta Cheese mixed with the chopped Dill and parsley.



Wet the tip of the pastry with a touch of water to seal the Boreks tight.

Niagara Falls on a Gloomy Day.


Last week we decided to go to Niagara Falls on the American side....to do some shopping. The prices are great and even though we have the same exact retail stores in Toronto we still like to go over for a few days.
This photo I took standing on the Rainbow Bridge crossing over to the border in the car.....it was sort of stand still traffic, I would have thought there was no Holiday of any kind so why the traffic?......the reason was that it was Reading Week and everybody was taking a few days off to shop I guess.
American on the left side and Canadian on the right side.



 This is the American side........it was a cold, grey, gloomy and wet day so the mist was freezing as it was going into the air....that is why it looks so cloudy.




 This was the Canadian side...actually this is where all the action is. I'm not just saying that because I'm  Canadian but it has lots of streets filled with retail stores, restaurants, casinos and lots of hotels and motels and carnival like things..... so if you ever visit Niagara Falls you have to stay on the Canadian side. But most of all you get a better view and very close up to the Falls.

This pumpkin is about 12 feet high...I use to take my daughter here every year when she was younger, so she could crawl inside and out.

TURKISH BAZAAR

Today I'm showing  "BLUE" from a Bazaar in Turkey.....I think that every Bazaar that I have visited in Turkey they all have that "BLUE" sheet covering their tables. It sort of I think brings out the fruit and veggies vibrant colours.
I could hang around these Bazaars all day if I could....it is so vibrant and busy there with anything you want or like they have. The fruit and veggies are amazingly fresh and most are organic......the fruit and veggies actually taste and smell like they should...especially if they are in season...because they are brought to the market just freshly harvested.
This is one of the smaller Bazaars in a village.....the city Bazaars are quite big...it takes hours to go through them. The noise there is quite loud with the vendors screaming something about their stalls.....trying to entice customers with their things...... funny I found that you just can't pick up a fruit or veggie and start looking at it or squeezing it...not allowed. You tell the seller how much of a weight you want and they will bag it for you...everything is so perfect that it doesn't matter if I don't squeeze the fruit or veggie or look it over.




 Poor chickens....
