Cornbread

This Halloween my nieces and nephews of all ages came over for Halloween to Trick or Treat in my neighbourhood and Halloween dinner. My husband Don and our neighbour Nick go all out and decorate for the occassion on both houses. Ours is more kid friendly and the neighbour's home is more eerie and scary, to the point where some kids just pass by and don't stop to get their treats. For some reason we have a few hundred kids coming around........but we are always prepared with the candy and treats. But all in all it has become a tradition and all the neighbourhood kids know to come for the fun.

Every year I make my 'famous' chili, to which I triple the recipe.........and my fave 'cornbread'.
I have several recipes but this has turned out to be my most flavourful and moist.


Cornbread

1 cup butter, melted

1 cup white sugar

4 eggs

1 (15 ounce) can cream/style corn

4 ounce can green chile peppers, drained

1/2 cup Monterey Jack cheese, shredded

1/2 cup Cheddar cheese, shredded

1 cup flour (all purpose)

1 cup Yellow Cornmeal

4 tsp. Baking powder

1/4 tsp. salt

1. Preheat oven to 300 degrees F. (150 deg. C). Lightly grease a 9 x 13 inch baking dish.

2. In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in cream corn, chilies, Monterey Jack and Cheddar cheese.

3. In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture: stir till smooth. Pour batter into prepared pan.

4.Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.
