Lonestar State Cheesecake

Lonestar State Cheesecake
(Recipe adapted from Christina Common Tuschen by Sunny Anderson)


This turned out to be one of my favourite cheesecakes of all time............in my neck of the woods we don't have any Cheesecake Factory Restaurants in Toronto. But, but when we go to Buffalo for our shopping trips we always stop in for some cheesecake. Then I found Cheesecake Factory cheesecakes in the frozen section of Sam's. To make my story shorter they closed them all down the Sam's shopping stores here for some reason. Well I was heartbroken till I found this recipe watching Sunny Anderson on her cooking show. I made this recipe and my Family gave it a thumb's up!!!!!!
2 cups cinnamon graham cracker crumbs
6 to 8 Tbsp. butter melted
4 (8 oz.) pakages cream cheese, softened
1 1/4 cups sugar, plus
2 Tbsp. sugar
2 Tbsp. vanilla extract
2 Tbsp. lemon juice
4 eggs, beaten
2 cups sour cream
1 pint blueberries
1 pint strawberiies, sliced

9 inch springform pan.......

Preheat oven to 325 deg.F.
In a food processor blend crumbs and melted butter till moist but not wet.
Press into the bottom and up the sides of the springform pan.
In a large bowl, using an electric beater, combine cream cheese, 1 cup sugar, 1 tsp. vanilla and the lemon juice, till light and smooth.
Slowly mix in eggs then pour into the prepared pan.
Bake 55 minutes or until the center sets.
Turn off oven and remove cake.

In a medium bowl mix together sour cream, 1/4 cup sugar and vanilla.
Spread this over the top of the cheesecake and return to the warm oven for 30 minutes.
Remove then let cool to room temperature before removing springform.

Meanwhile, in a small bowl toss together blueberries and sliced strawberries with remaing sugar.

To serve.........slice cheesecake into wedges and serve with fruit.
I sometimes use different fruits like raspberries, peaches, basically whatever fruits are in season...............or some kind of sauce for example chocolate.

...............here we had it with whole strawberries.

Icy Niagara Falls

This picture was taken exactly a week ago of Niagara Falls when we went over the border to Niagara Falls and Buffalo to do some shopping. This picture I took going over the Bridge to U.S.A....It is still icy, with all those chunks of ice floating around. When it is real cold the sight of more ice and snow it look amazing.
To the right is the Canadian side with all the Hotels.




This is the New York state side.....



Can you see all the people standing looking down at the Falls on the left corner....sure must be cold. Becuase that day it was pouring rain and windy.




Here we are in Niagara Falls on the Canadian side just before we hit the US border bridge and we were passing Planet Hollywood.



My fav chocolate Bar........yummmm.

Sure is one big Hershey Kiss.........on top of this building. This would last me a whole day of eating it.

See the Royal Canadian Mounted Police standing there. In the summer there is a Line/up to stand and take a photo beside him.
A main street before we turn left on the Bridge to cross over.
We love to go over the Border to shop.......even though I live in a bigger city and we have lots more Malls to shop and the same stores but Buffalo prices are so much better..... really it feels like a mini/vacation when we go over for a day or two.

Spaghetti Squash Roasted

This week I decided to do all very low calorie foods and get myself and family into eating more healthy. We normally do eat healthy but sometimes we go off the track once in a blue moon. So instead of pasta we had this for dinner, it was quite tasty. That was my daughter talking who normally would not touch it.

I was at the local Veggie store and they had a pile of these 'spaghetti squash' so I purchased one. It was pretty pricey, I paid $5.89 for it.
SPAGHETTI SQUASH

Preheat oven to 400 degrees.

Cut the squash in half and remove seeds....scooping them out.

Drizzle a small amount of olive oil and brush it on the cut side.
Sprinkle on some salt and pepper and minced garlic if you like....or any kind of seasoning to your taste.

Cut side down, place the squash on a baking sheet.
Roast anywhere from 30 to 45 min.......depending on the size of your squash.

Let sit for 5 min. to cool down.
Scrape the flesh of the squash using a dinner fork.....moving around gently. Fluffing the strands.

You can dress up your squash with spaghetti sauce or just add parmesan cheese to it. You can even drizzle some olive oil on it that has been infused with herbs....and salt and pepper to taste.
Tip......Did you know that the spaghetti squash seeds could be roasted same as pumpkin seeds for an extra treat.

Blue Ducks

I have had these two ashtrays with the Ducks for ever since I can remember. They have these blue tones on them. Well actually the ashtray with all the Ducks was bought at a Yard Sale years ago and the one with the single Duck has been around my home and my Mom's for ages. Can't remember where it was purchased from and when??????

They have never had ashes in them.........


This is my fav ashtray, the ducky looks so cute trying to get a snack.

Old Fashioned Chocolate Cake

Today is "Foodie Friday" which we have the gracious Hostess Michael from Designs by Gollum for hosting this weekly. Be sure and visit the other participants for some inspiration and great foods.


Last weekend I made this Hershey's Old Fashioned Chocolate Cake..............I had some pints of raspberries hanging around my fridge so I decided to decorate with them.
That weekend I had some nieces coming over for dinner and their favourite along with my daughter Jackie love Chocolate and raspberries...........so I created this cake.

I melted some Chocolate squares and drizzled on top.


I got the recipes off the back of the Hershey's Cocoa container.......for the cake and frosting.
