Every year I make my 'famous' chili, to which I triple the recipe.........and my fave 'cornbread'.
I have several recipes but this has turned out to be my most flavourful and moist.
source; allrecipes
1 cup butter, melted
1 cup white sugar
4 eggs
1 (15 ounce) can cream/style corn
4 ounce can green chile peppers, drained
1/2 cup Monterey Jack cheese, shredded
1/2 cup Cheddar cheese, shredded
1 cup flour (all purpose)
1 cup Yellow Cornmeal
4 tsp. Baking powder
1/4 tsp. salt
2. In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in cream corn, chilies, Monterey Jack and Cheddar cheese.
3. In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture: stir till smooth. Pour batter into prepared pan.
4.Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.
Your cornbread recipe sounds yummy.
ReplyDeleteThanks for stopping by my blog and commenting. I love to meet other Canadian bloggers too, especially those from Ontario. I'm close to Belleville, so a couple of hours from you. I see we use the same kind of camera. I'm off to have a look around your blog. Have a great day.
Looks delish Erica!
ReplyDeleteI love the additions you made to your cornbread! Sounds and looks delicious!
ReplyDeleteYum, I love spicy cheesy cornbread. What a great accompaniment to your chili. I just made a pumpkin cornbread on my blog and linked it up to Tasty Tuesdays. By the way, I'm also holding a CSN giveaway and you're welcome to come by and enter. http://sweet-as-sugar-cookies.blogspot.com/2010/11/45-csn-giveaway.html
