Spinach Balls

"Awesome Spinach Balls"


This has been a busy week for me not to mention that we had scorching hot and humid weather with extreme weather alerts throughout the city. I tried not to use my oven due to the humidity and heat but i had this recipe laying aroud which I've been meaning to try so I cranked up the A/C and started to bake these. Hey..........it was only about 1/2 hour so it wasn't too bad with the oven turned on.
I got this recipe off a fellow Blogger that goes by the name of ChefBeck that I'm on this foodie board...........




Awesome Spinach Balls
Adapted from a Susan Branch Cookbook


2 [10 oz.] pkgs. frozen chopped spinach
4 eggs beaten
2 cups herb stuffing mix
1/2 cup Parmesan cheese, freshly grated
1 garlic clove, minced
1 small onion, minced
1 tsp. dry thyme, crushed
3/4 cup butter, melted
salt and pepper to taste


Ready to be baked.........

Cook spinach according to package, drain and squeeze very dry.

Mix all the ingredients well and chill for 2 hours.

Roll into 1" balls.

Put on cookie sheet and bake at preheated oven 325 deg F. for 25-30 min. till browing edges.

They are great warm and room temperature.



Before baking you can freeze on cookie sheet, then store in plastic bags. Thaw before baking.

These are great as appetizers.........which maybe served with a dip. As you can see I just made them for my Family, and my husband was dipping his into Tzatziki, he said it kind of reminded him of Spanakopita.
But on a nice decorative platter with maybe some cherry tomtoes stuffed inter/mixed just to add colour would be nice............. or even I read someone mentioned they were using a Marinara sauce for dipping. the choice is yours but they are addicting.

Red Delivery?

Today I'm participating in

I love anything red, it has to be one of my favourite colours. I even have a room in my house painted a wagon red and through the years all my sport cars have been a cherry red.

Today i'm showing a picture of a McDonald's delivery "Vespa" with it's brilliant red.
My husband went to Izmir Turkey this spring to visit some family members and business and took a snap shot of this "McDonald's Delivery Bike". He thought I would get a kick out of this.

Even though Izmir is quite a large city everything there is compact.....they have no Drive/in windows or parking lots in front. I remember when I was there in McDonalds their washrooms were on the 4th floor. Phewww that was a climb, but I guess it burned off some calories after having that Big Mac.

Marigolds

Today I'm participating in
with a "YELLOW MARIGOLD" flower.






I love the brilliant yellow colour as it peeks in the pots or just in the garden.
This year I planted some in my herb pots as to keep away some pesky squirrels and I hope to keep that darn Chipmunk out also. I hope this works as this is what my neighbour told me so I decided to try it out.
Did you know???? Marigold's were first discovered by the Portuguese in Central America in the 16th century.



Because of the strong pungent smell of these Marigold's leaves I planted them in my herb pots to discourage insects and hopefully a couple of Chipmunks. These Marigold's are sharing with some Italian Parsley and Sage.

"Lazy" Cabbage Rolls


These are my favourite flowers........Lily-of-the-Valley..... this is why I posted a photo of them. This year I can enjoy them as they have covered most of the back of my backyard. In the years before my doggy Teesha [RIP] use to stomp all over them........so I really could not enjoy them, for some reason she liked to just lie down and take a nap on them, causing them not to grow or bloom. I guess it was cool for her because she was Siberian Husky and was hot with that fur coat. Or she just liked the aroma of them while she was napping.
I love the smell of them, I put a vase full of them in the kitchen and it has filled the air with that floral smell that I love.
Now to my Foodie recipe for this week. I chose Lazy Cabbage Rolls as my background is Ukrainian, and what Ukrainian doesn't eat Cabbage Rolls. I still have to make a visit to the Ukraine as I've never been and would like to have a taste of the real Cabbage Rolls.
I don't like the tedious job of separating all those cabbgae leaves to roll them so when I found this recipe I usually make them like this. But for special Holidays at least once a year I get out the big old cabbage and roll them up like you are supposed to do originally. Who has time, but this recipe is fast and easy and I always have the ingredients on hand.
"LAZY" CABBAGE ROLLS
2 lbs. lean ground beef
1 large onion, diced
2 garlic cloves, minced
1/4 cup parsley, chopped
2 cans tomato soup condensed, [I use Campbells]
2 cans water from soup
1 cup raw rice
6 cups cabbage, shredded
Shredded Cabbage.......I just buy a bag of Cole Slaw mix and use that......... it saves time.

Saute beef with the onions, garlic and then add parsley.

When cooked add the raw rice, tomato soup and 2 cans water, mix well to combine.
On bottom of greased 9 x 13 baking pan spread the shredded cabbage and pour on top the beef rice mixture.
Cover with foil and bake at 325 deg. F. for 1 1 /2 hours.



I already had a piece............yummmmm!

Blueberry Pound Cake

BLUEBERRY POUND CAKE
Today I decided to do a Blueberry Poundcake. I got the recipe from a fellow Blogger at vegetablematter.blogspot.com.........it looked so good and I had all these blueberries hanging around so I decided to make one. You must try it, it is so delish and very blueberry tasting.
My husband after dinner always likes something sweet, so this cake will do him for a few nights, so far he's given me his thumbs up for this cake.


Ingredients
1 cup butter
2 cups sugar
4 eggs
1 tsp. vanilla
2 3/4 cups flour
1 tsp. baking powder
1/2 tsp. salt
2 cups fresh blueberries
1/4 cup flour for bluberries
1/4 cup sugar for the pan
butter for greasing pan
10" tube pan or similar


Method
Preheat oven to 325 deg. F.
Grease pan and dust well with 1/4 cup sugar.
Combine 2 3/4 cups flour with baking powder and salt.
Dredge blueberries with the 1/4 cup flour and mix well to coat. You can use frozen blueberries as they also work well.
Cream butter and sugar.
Add eggs one at a time. Mix well each time.......add vanilla and mix well.
Slowly add dry ingredients........when fully incorporated, fold in gently blueberries. Batter will be thick so some of the blueberries may get mashed up in the mixing process.
Bake til' golden on top and baked through, about 60 min. to 75 min....depending on your oven.

Cool, then dust with powdered sugar.

........................ serve at room temperature or toasted with some preserves........on the side. Next time I bake it I'm going to put on a Lemon Glaze.

Store well wrapped at room temperature and great for freezing for later.

Blue and White Pieces

This is the start of a new week and I have a full plate already. I remember my Dad would never do anything on a Monday that was important because he said Mondays are a heavy day and the beginning of a new week and is carrying the whole week. To this day I sometimes do this also but I think that I just don't want to do it so I use this as an excuse. But sometimes it doesn't work out that way I have to do what I have to do.
Today I'm showing some of my Blue and White collection. I have so many of them because every Flea Market, Yard Sale, Garage Sale, Antique Market I always manage to find something.......and have managed to acquire quite a lot.
